I spent most of July in Florida with my cookery books and ipad on our family holiday.  I soon found myself caught up with American cuisine, Caroline had made this recipe last year when we were there – so this year we tried to perfect the recipe. I then had the problem coming home of translating it into metric and imperial measures for everyone to enjoy.  This is the result – an authentic Key Lime Pie which we all loved with fresh raspberries on the side.  The photography was all done in Florida, so I had to end the recipe with my favourite photo of the holiday.

I love it when we get to October as one of my favourite fruits is apples.  I enjoy putting them in savoury and dessert recipes and this one uses them in 2 different ways.  It’s a great recipe for entertaining, but in my house I always have to serve it with custard.  Although you can get ahead with the pudding and sauce I would make the crisps on the day you want to eat them.  I made mine two days before I wanted to serve them and when we came to eat them they were chewy rather then lovely and crisp – which they had been on the day they were made.

These twice baked souffles are perfect for entertaining  They can be made in advance, chilled or frozen until needed, then when cooked for the second time rise up beautifully and are very tasty too.  Judy and I had them for lunch when we were working and they were great.

Peel and cut the potatoes into chunks then place in boiling salted water and cook until tender.  Meanwhile put the haddock in a pan with the milk, bring to the boil then turn the heat down.
