These lovely thin wafers of pastry are lovely served with the creamy blue cheese dip.  If you are serving drinks I couldn’t think of anything nicer.  Roll them with a rolling pin or use a pasta machine if you have one.

We both love haggis and visit Scotland regularly.  Make a stuffing with the haggis, thyme and chestnuts and stuff some chicken breasts.  Serve with a whisky and cranberry gravy and team with some lovely shredded sprouts and leeks.  Enjoy!

Probably one of our easiest and most popular little smoked haddock pots.  The fish does not need cooking, just make them up and pop them in the oven.  Serve with the soda bread for a great starter or make them a little bigger and have them for supper.  Never fails !

The winning ingredient in this lovely tart is 4 heaped tablespoons of onion chutney on the base.  It is easy to make and if you are not confident in making your own pastry but a pack of good shortcrust pastry and roll it out to fit your tin.  Don’t be put off by blind baking, if you don’t have ceramic beans just use dried rice or screw up some foil to stop your pastry from puffing up.

Spring fish pie with petits pois a la francaise

One of the nicest fish pie mixtures and instead of topping with mash just a thin lattice of puff pastry.  We served it with the French mix of petit pois and lettuce, it just works really well together.  A bit of effort and you have a dinner party dish.
