The Art of the Wedding Cake

A wedding…the never ending questions that come after one word, the excitement, the emotions, the drama and most of all the cake! There is so much that goes in to one single day.

The wedding cake is like a piece of art, designed for the Bride and Groom. The cake should tell a story. To begin, questions need to be asked, questions you should be asking are what is the theme of the wedding, what do the Bride and Groom want it to say, what type of cake do they want and is it possible!

The effort put in to these cakes is phenomenal, yet there is always so much left over because everyone has been eating and drinking for hours beforehand. But to be honest, the cake is more about how it looks! The Maid of Honor made this cake, the sister of the Bride. That is where the story begins for this wedding cake.

 

The cake that follows is a three-tiered chocolate cake with chocolate butter icing decorated with milk and white chocolate cigarellos topped with malteasers. What more could one want! It sounds fancy but to the Bride it was just her child hood birthday cake with a few more tiers and fancy chocolate instead of the Cadburys chocolate fingers.

 

It all began with a 5am wakeup call beginning with making the mixtures. In total 36 eggs had to be cracked with enormous amounts of coco powder, butter and sugar all blended to make a delicious cake batter. The bottom tier had to be slow cooked in order for it not to burn the top and to keep it moist. The other tiers had to be made around the cooking of the bottom tier. Hot and covered in chocolate and 9 hours later the sponges were made and with multitasking, the 3 kilos of icing was boxed up and stored away for when the cake to be put together.

Icing the cake was the easy part, each one was iced on an individual board so that the cake could then be cut with ease and it gave extra support to the structure as they were leaning against the dowels. The chocolate cigarellos were alternated around the cake, and then the tempered chocolate was melted to stick the malteasers together to form a mountain on to the top and filled any gaps between the layers.
